Matcha Lover's Cookies

Ingredients

  • 140g / 5 ozFlour
  • 15g / 1 tablespoonMatcha powder
  • a pinchSalt
  • 100g / 3.5 ozButter or cake margarine(at room temperature)
  • 70g / 2.5 ozGranulated sugar
  • as neededGranulated sugar(for coating)

Instructions

    Bring the butter to room temperature. Sift together the flour, matcha powder, and salt.

    Place the softened butter in a bowl. If too firm, knead until soft or briefly microwave.

    Add the granulated sugar to the butter and mix with a whisk until pale and fluffy.

    Switch to a rubber spatula. Add the sifted dry ingredients and fold gently, cutting through the mixture until just combined.

    Gather the dough and divide into 2-3 portions. Place each on plastic wrap and shape into square logs about 3cm wide. Freeze for 1 hour until firm.

    Slice the frozen dough into 1cm thick rounds. If too hard, let sit at room temperature for 5 minutes for cleaner cuts.

    Optional: Roll the sliced cookies in granulated sugar to coat the edges for extra crunch.

    Arrange on a parchment-lined baking sheet with space between each cookie. Bake at 170°C (340°F) for about 13 minutes. Do not let them brown to preserve the matcha flavor.
