Matcha is stone-ground powder made from tencha, tea leaves grown under shade for 20 or more days before harvest, then steamed and dried without rolling. Shading blocks sunlight, preventing umami compound L-theanine from converting to bitter catechins, creating matcha's distinctive covered aroma, sweet taste, and vivid green color from increased chlorophyll production.
Matcha is specifically ground tencha (shade-grown tea leaves), while powdered green tea is ground sencha or byproduct powder from regular tea processing. Only matcha has the distinctive covered aroma, vibrant green color, and sweet umami from 20 or more days of shading. Powdered green tea does not go through shading and tastes more bitter. Instant tea powder is freeze-dried tea extract that fully dissolves in water.

Because we mill to order for maximum freshness, the first order typically takes 5 to 7 weeks from order confirmation to delivery. From the second order onward, we work out a recurring schedule with you to ensure timely restocking. We ship directly from Kagoshima, Japan shortly after milling.

Store matcha in an airtight container away from light, heat, and moisture, preferably refrigerated. Once open, use within 2 to 3 months for optimal freshness and vibrant color. We highly recommend refrigerating after opening.
Once opened, use within 2 to 3 months for peak color and flavor. After that, matcha is still safe to consume but better suited for lattes or baking where milk and heat mask some flavor loss. Unopened matcha stays fresh for 12 to 18 months.
