Matcha White Chocolate Brownies

  • 115g / 4 ozUnsalted butter
  • 100g / 3.5 ozWhite chocolate(chunks or bar, for melting)
  • 3Large eggs
  • 155g / 5.5 ozSugar
  • 45g / 1.5 ozBrown sugar
  • 1 teaspoonVanilla extract
  • 130g / 4.5 ozFlour
  • 5g / 1 teaspoonMatcha powder
  • ½ teaspoonSalt
  • 115g / 4 ozWhite chocolate chips(plus extra for topping)

Instructions

    Preheat the oven to 170°C (340°F). Line an 8-inch square pan with parchment paper.

    Melt butter and white chocolate together in a small saucepan over low heat, stirring at intervals to ensure even melting and smoothness. This should take about 4 minutes.

    In a separate bowl, mix together eggs, both sugars, and vanilla.

    Slowly add the melted white chocolate mixture to the egg mixture, stirring until well combined.

    Sift in flour, matcha powder, and salt. Stir until thoroughly incorporated.

    Fold 110g white chocolate chips into the batter.

    Pour the batter into the lined pan. Sprinkle remaining chocolate chips over the top.

  • White chocolate scorches much more easily than regular chocolate, so always use low heat when melting.
